Hare Tamatar Ki Sabji (Green Tomato Curry)

Hare Tamatar ki sabji or green tomato vegetable is a quick and easy side dish or dry vegetable made with raw green tomatoes and without onion and garlic.  It has a sour and sweet taste and goes well with roti or rice.

When green tomatoes are in season I like to make this quick stir-fry. No fancy ingredients, just pantry staple ingredients and you have one lip-smacking no onion no garlic veg ready in minutes. 

I grow a lot of tomatoes during summer. I am left with loads of green tomatoes too. Summers here are short, if at all. I like to make a batch of my most famous green tomato chutney. It goes well as a spread on bread or with Idli and Dosa.

This hare tamatar ki sabji is a recipe from my home. My mom used to make this when she used to get green tomatoes from the market. I love this veg and make a similar version as to what she used to make. Love this green tomato curry best with simple dal, rice, and roti. I would say one of my everyday thali meals.

Ingredients used in Green Tomato Sabji or Hare Tamatar ki Sabji

Green Tomatoes – The main ingredient. The firm the better. However, you can make a similar version with the ripe tomatoes.

The next ingredients are simply to flavor the sabzi or the tempering. I have used oil, cumin seeds, mustard seeds, green chili, chopped ginger, turmeric powder, red chili powder, and coriander powder. Salt is added for flavoring. Jaggery to balance the sour taste. The sabzi gets cooked very quickly. Once the tomatoes are a bit mushy it’s done. Do not overdo the tomatoes, or it will be too soft.

The sabzi is vegan, gluten-free, dairy-free, and nut-free and is without onion and garlic too.

Shelf life of Hare Tamatar Ki Sabji

The sabzi would stay good in the refrigerator for 4-5 days.

Can we freeze this Green Tomato Vegetable?

Yes, you can freeze it for up to 6 months. Freeze it in portions, so that it becomes easy to defrost, and use only as much required. When needed just defrost, reheat, and enjoy.

Ingredients

  • 2 cup 300 grams Green Tomato chopped into cubes
  • 1 teaspoon cumin seeds
  • ½ teaspoon mustard seeds
  • 2 tablespoon coriander powder
  • ½ teaspoon turmeric powder
  • ½ teaspoon red chili powder Optional and as per taste
  • 2-3 green chili chopped Optional and as per taste
  • 1 teaspoon chopped or grated ginger
  • 1 tablespoon Jaggery or Granulated Sugar or Brown Sugar
  • Salt
  • 1 teaspoon oil

Instructions

  • In a heavy bottom pan add oil.
    1 teaspoon oil
  • Once hot add cumin seeds and mustard seeds.
    1 teaspoon cumin seeds, ½ teaspoon mustard seeds
  • Let it splutter.
  • Once the seeds splutter add green chili and ginger and saute for a few seconds.
    2-3 green chili chopped, 1 teaspoon chopped or grated ginger

  • Now add turmeric and red chili powder and give it a quick stir.
    ½ teaspoon turmeric powder, ½ teaspoon red chili powder
    Cooking of the masala.
  • Add in the chopped tomatoes, coriander powder, and salt.
    2 cup 300 grams Green Tomato chopped into cubes, 2 tablespoon coriander powder, Salt
    Adding of Green Tomatoes.
  • Mix everything.
    Sabji getting cooked.
  • Cover and cook turning in between.
  • Once the tomatoes are done (They would be a bit mushy), add in the jaggery or sweetener and mix.
    1 tablespoon Jaggery or Granulated Sugar or Brown Sugar

  • Once the jaggery is all mixed, switch off and let the sabji sit for 10 minutes for the flavors to amalgamate.
  • Enjoy it with rice or roti.
    Cooked Bhaji in a pan.

This sounds so full of flavor. Lucky you for having green tomatoes available. I usually have to "borrow" them from friends. Thankfully, one of our farmer's market vendors started selling them this year. Can't wait to try out this recipe!
